I recommend Full Metal Alchemist Brotherhood it’s so good & aside from Naruto it’s personally one of my favorites I would also recommend Attack on Titan it’s similar to both Brotherhood and Naruto but with the dark tone of Death Note or you could do season 3 & 4 of My Hero
Kakashi is not completely useless without the sharingan, on the contrary since the sharingan was always active, it was constantly using up bits kakashi's chakra 24 hours a day, so kakashi is actually stronger without the sharingan then he was with it, but it's just that naruto, sasuke and madara are basically like gods now so he can't do much to help in this situation.
The Itachi filler arc would be nice to see. In terms of future shows to react to, RWBY would be great and a lot of fun. You've already started watching it and the show only improves from there, especially in animation and budget. Roosterteeth generally allows full reactions as well so that's always a big plus and if there's a problem with copyright you can contact them and they should clear it up. Definitely recommend this one
