Correct me if I’m wrong but I don’t think Naruto meant he would just die for Sasuke but rather to protect the village. He basically said whatever anger and revenge Sasuke held towards the Leaf, he would take it in place. And because of their powers, it’s a fight that neither are likely to walk away from.
I think suzy forgot that sasuke kill danzo not because he is the hokage but he is an evil person so when she said what if kakashi was the hokage or naruto well sasuke target was danzo not the hokage it was a coincidence that he was the hokage+to me sasuke save the five nations if hw haven't kill danzo no one will trust the leaf village and it will be considered by others as an evil village like we saw everyone doesn't trust danzo +he would plan to destroy others village so it's a good think what sasuke did
To answer your question about Hokage no I don't think it would be Yamato. After Kakashi, Shikaku (Shikamaru's father) would probably be the most logical option as he is the leaf's chief strategist. Choza (Choji's father) would be my next choice. He doesn't get a lot of screen time but he is a very competent leader and very self aware. He would be an excellent hokage until Naruto is ready.
