Hey, Suzy! Since you have asked for a short anime to replace Demon Slayer I would recommend:
1) One Punch Man;
2) Mob Psycho 100;
3) Dr. Stone;
4) Dororo;
5) Fire Force.

And not short, but not long either:
1) Fullmetal Alchemist;
2) Jojo;
3) Attack on Titan.

One Punch Man is a satire on shounen manga and anime. Only recommend it to those that have watched a lot of shounen. Like one should at least watch Dragonball which is a primary target of the satire.
